this is a really simple trick that i use at parties to dress up a casual drink: use popsicles for ice! they keep the drink nice and cool AND give it a fun boost of flavor! i used a similar idea when i made my shamrock juice. this version is a kid friendly drink — as long as your kids don’t think that the carbonation is “spicy” like my kids did at first! but you could also easily make this an adult beverage with a splash of tropical liquor. its really really simple. that’s probably why i like it….
just chop up the popsicles – i used sugar free tropical flavors provided as a part of the Popsicles® ambassador program. layer the flavors into a glass and pour any sparkling caronated drink over top. i used sparkling grape juice this time but i have used others in the past.
top it with an adorable straw and serve to your guests! i recommend creating these as close as you can to your guests arrival. you could even let them pick their popsicle flavors and make their own! while the popsicle will melt in about 10 minutes, the drink will still be chilled and flavorful so keep that in mind when preparing this for your guests.
