back to school breakfast ideas

i am constantly on the lookout for healthy, filling, easy, and quick breakfast ideas for my kids – especially with back to school craziness! i find that i hear this all the time amongst my friends – we are always trying to swap ideas to avoid the cereal breakfast. i swear cereal lasts about 10 seconds in my kids bellies. so i adapted one of my mom’s recipes into an easy, quick, make ahead back to school breakfast idea that you can quickly reheat and serve in a pinch – AND it is filling & healthy.

have you ever had one of those awesome egg casseroles? my mom makes the best one ever. but it takes a good 45 min to cook, you have to make it the night before and wake up early to put it in the oven. maybe if i was super-mom i would be doing this. but i’m not. i’m mindy. so i make individual muffin tin versions of this. they can be made early in the week, take about 10 min to prep and about 15  minutes to cook, can be stored in the refrigerator, and reheated in the microwave. plus they are cute little servings and easy for my kids to pick up (and eat in the car on the way to school…don’t judge!!)


the ingredients easy to find – most of them i had on hand as our family staples.
i used thick cut Farmland bacon that i found while i was shopping at Grocery Outlet where
they have a great variety of Farmland products – specialty cut ham, breakfast sausage, and of course BACON!!

12 slices of white bread
1 4-oz. can of chopped green chiles
10 eggs
1 1/2 Tbsp. half & half
1 1/2 cups shredded cheddar cheese
6 slices cooked & crumbled Farmland bacon

Use a large biscut cutter to cut circles out of the bread slices.
Press the circle of bread into a muffin tin to line the bottom.
Spread a teaspoon of chopped green chiles over the bread.
Whisk together eggs and half and half.
Pour into each muffin tin cavity.
Top each muffin with cheese and crumbled bacon.
Bake at 350 degrees for 15-20 minutes or until cooked through.
Allow to cool before removing them from the muffin tin.

  5. Just a suggestion, Mindy, and the rest of the parents reading this: have your children help you to the best of their ability. They learn so fast and once they’ve practiced these recipes and others, they will be empowered to create on their own. Also, they learn reading skills, math skills and the pleasure of delayed gratification while they smell the delicious treats as they bake. That’s how I learned to cook from my great-grandmother and I’m now a healthy 65 year-old vegetarian cancer survivor.

  6. Oh, your daughter is so sweet and beautiful!! Love that smile, i only wish my boy would give it to me — he is so picky, and would not even try cute stuff i make JUST TO FOR HIM. Oh well, maybe i will experiment on my hubby, his smill will make me happy too :-)

  9. I made these breakfast muffins to freeze for early morning starts to grab & go. They are really tasty & freeze really well too, I just take them out of the freezer the night before & put it in the fridge to defrost overnight & eat cold.

  10. Is there a way to make these ahead and then reheat in the oven? I need to make a large quanity and then reheat them. They look really easy to make and look delicious.

    • you can make them and then reheat in the oven yes! i would cook them all the way through and then remove them from the pan and put them in the refrigerator when cool. then just pop them onto a sheet pan at on low heat to re-heat before serving!!

    • Shelley – I found that it made about 12-16 muffins depending on how much you filled them and the bread you used! hope that helps! xo

  16. Made these this morning and they are amazing!!! I ommited the green chiles (only because I didn’t have any) and used skim milk and wheat bread. They turned out great. Not sure how anyone would be able to freeze these because my family almost polished off the whole batch in one sitting :)
