today i am sharing with you an amaaaaaazing recipe. i love love love pecan pie. did you see the last macaron monday - pecan pie macarons!! i can’t get enough. i am making pecan pie bars this week and i’ll be sharing those soon. this pecan pie muffin recipe is so yummy. i found the recipe here and modified it a bit. it totally tastes like pecan pie but is a way simple recipe! Pecan Pie Muffin Recipe
1 cup brown sugar
½ cup flour
1 1/2 cups chopped pecans
10 Tbsp. butter, softened
2 eggs
1/2 cup whole pecans
Preheat oven to 350 degrees.
Combine the brown sugar, flour, and pecans in a bowl.
Whisk the eggs in a separate bowl and compine with the softened butter.
Use a silicone muffin tray or grease your muffin tin generously.
Fill muffin cups and top with a few whole pecans.
Bake for about 20 minutes or until the edges are lightly browned.
Serve them warm with ice cream or a dolop of whipped cream!
