do you love macadamia nuts? i do. i loooooove them. they feel so fancy to me. and i love chocolate. so this dessert pretty much has me all over it: Chocolate macadamia nut dessert parfait! my family enjoyed this last night after our sunday family activity (my little guy had some soy ice cream) and it was a big hit! i love the texture & crunch of the macadamia nut and the chocolate against the pudding and whipped cream. i’ll make this again for sure! i used Hawaiian Host milk chocolate AlohaMacs – have you had them? they are individually wrapped chocolate covered macadamia nuts & they are super yummy. i bought the milk chocolate ones for the recipe and some dark chocolate ones to snack on! i got mine from Raley’s but you can look here to see what retailer near you sells them.

Chocolate covered macadamias

the recipe is pretty simple {the full recipe is at the end of the post} first, chop up the chocolate covered macadamias. prepare vanilla pudding (not instant) and while still warm, incorporate 2/3 of the chopped macadamias and chocolate. chill this until set. whip up your whipped cream (or use prepared whipped topping) and you are ready to layer!

the best way to get your layers looking even and nice (not smeared all over the side of the glass!) is by using a piping bag. i had one ready to go for the whipped cream using a fun tip to give it some finesse, but you don’t have to do that – i almost ALWAYS use a ziplock bag! cheap & easy. fill the bag with your filling and snip the corner. that way you will get the pudding into the base of the glass and have it look perfect! alternate layers of pudding, chopped AlohaMacs, and whipped cream. since my glasses were small i just did three layers but you could continue this if you had a taller glass.

the recipe below makes about 8-10 servings using the size glass that i used. since it was just my little family (and my son can’t have one) i halved the recipe. so that meant one for the hubby, one for my daughter, one for me when i was done taking photos, one for me when we ate as a family, and one for me hidden in the fridge for tomorrow afternoon. but of course if you wanted to eat more yourself you can make the whole recipe below!

Chocolate Macadamia Nut Dessert Parfait

Serves: 8-10
 
Ingredients
  • 7 oz. Hawaiian Host Milk Chocolate AlohaMacs
  • 1 box (4.6 oz.) Vanilla Pudding (not instant)
  • 2 cups Whipping Cream
  • 3 Tbsp. sugar
Instructions
  1. Chop Hawaiian Host Milk Chocolate AlohaMacs, and set aside ⅓ to use as a topping and ⅔ for the pudding
  2. Cook vanilla pudding according to package directions
  3. When pudding is done and warm, stir in ⅔ of the Hawaiian Host Milk Chocolate AlohaMacs
  4. Cover with wax paper on top (avoids film). Cool. Place in refrigerator
  5. Whip the cream and add sugar to taste
  6. When pudding is cold, layer glasses with pudding, sprinkle with chopped Hawaiian Host Milk Chocolate AlohaMacs, then layer whipping cream. Alternate with layers about 1 inch thick
