Healthy Pulled Pork Tacos with Mango Salsa

yesterday i did something that i pretty much said i would never do. or even want to do ever. i ran a half marathon. mostly it was the convincing of some pretty amazing friends, but once we started training i realized how much i enjoyed getting healthy again. its not that i was super unhealthy – i have completed several triathlons, and have played sports all my life – even through college and even AFTER having babies lol. but writing two cookbooks in the last year means there are lots of cupcakes and frosting laying around my house… and less time to stay active. in december when my friends and i decided to train for a half marathon and it was the perfect way to kick start health eating as well. i have made deliberate choices with my eating habits – swapping healthy items where i can and getting back to the basics – smoothies in the morning, extra veggies for lunch and dinner, and snacking on fresh fruit.

the recipe i’m sharing today for healthy pulled pork tacos with mango salsa and quinoa is one of my favorites i have discovered over the last few months of training and healthy eating. i swapped white rice for quinoa, pulled pork instead of beef, used a low calorie root beer to flavor the meat, and topped it with a fresh salsa. and my mango salsa is pretty awesome if i do say so myself (right taylor?! i know you are in Ohio wishing you were here!!) it is similar to the salsa recipe in my book Party Food for Girls (wait you dont have my new book?! get it on amazon here!) if you dont want to make the salsa – just some slices of fresh mango would be great too – low calorie but adds a sweet bite to the dish.

so lets talk a bit about quinoa. honestly EVERY TIME i write it i spell it different – and it is usually wrong. its no secret i’m a bad speller but this word seems like it was invented to trip people like me up- i cant get it right!!! i’ll admit it took me a while to get on board with this trendy ingredient but now i’m a big fan. its much better than white rice and actually also better than brown rice – with higher fibre, protein, and iron counts among other benefits. so when i have the choice – i swap rice for quinoa (however you want to spell it)

Quinoa Pulled Pork Taco Recipe

usually i make the pulled pork with a regular soda, loads of brown sugar, and some lime and salsa. i decided to change it up to a healthier version by using A&W ten calorie soda – its only 10 calories but FULL flavor. so i cut out most of the brown sugar and whipped this up in a snap. its sweet & delicious! its one of four ten calorie DPSG (Dr Pepper Snapple Group) products along with 7UP, Sunkist, and Canada Dry. you can find them at Walmart – be sure to check out the site on the 27th for the upcoming deal and grab the coupon before you pick yours up while supplies last!

Pulled Pork Soft Tacos with Mango Salsa Pulled Pork Tacos with Mango Salsa

Ingredients
  • 2-3 ripe Mangos, diced
  • ½ small red onion, diced
  • 1 red pepper, diced
  • 1 bunch cilantro (optional)
  • 1 clove garlic, grated
  • ¼ cup oil
  • ¼ cup rice vinegar
  • 2 limes, zest and juice
  • 1 Tbsp. sugar
  • 1 tsp. tabasco sauce
  • 1 tsp. cumin
  • 1 pork roast (tenderloin or shoulder)
  • 1 cup Ten Calorie A&W Root Beer
  • ¼ cup brown sugar
  • 1 (16 oz) can of salsa
  • 2 limes, juiced
  • 2 cups cooked quinoa
  • 10-12 tortilla wraps
Instructions
  1. Combine the mango, red onion, red pepper, cilarto, garlic, oil, vinegar, lime zest & juice, sugar, tabasco sauce, and cumin in a medium bowl and set aside mango salsa.
  2. Place the pork into a slow cooker and fill with water until half the meat is covered.
  3. Cook on high for 3-4 hours or until pork is tender enough to shred.
  4. Drain water, shred pork and place back into the slow cooker.
  5. Cover with root beer, brown sugar, salsa, and lime juice. Stir to coat.
  6. Finish by cooking on low for 1 hour.
  7. Assemble soft tacos with quinoa, pulled pork, and mango salsa! Enjoy!

  5. This is an amazing recipe! Looks so fresh, springy and delicious and I love that it’s made using root beer. I’m pregnant and am not sure I believe in cravings, but if I did, I would say that root beer is one of them. I’ve been wanting it all the time and never drink soda normally. So odd.
