i have met some pretty amazing people along this blogging journey. unexpectedly, many have become dear friends. i didn’t necessarily start my blog to make friends, but when friendships began to form at every turn, it made me appreciate this experience so much more.  one of those friends is the talented glory of glorious treats. she is the best. honest, straight forward, thoughtful, hilarious, and a crazzzzzzy talented baker (and photographer! have you seen her blog? its beautiful). we met about a year ago at a blogging conference when we realized that we both were writing a book with the same publisher! i’m so excited to share her book Glorious Layered Desserts with you today and a recipe that she has allowed me to share with you all!! it is DELICIOUS — a Key Lime Coconut Cheesecake recipe!

now lets talk cheesecake. i love a good cheesecake but i realllllly love a good no bake cheesecake. this recipe tastes complicated but is really fairly simple with a few ingredients! the crumble is made with butter, graham crackers and coconut, the cheesecake is made with cream cheese, sweetened condensed milk, lime juice and zest, vanilla, and greek yogurt. topped with fresh whipped cream (or you can even cheat and get store bought) and toasted coconut – this is one irresistible treat.

Key Lime Coconut Cheesecake Recipe
Recipe type: Dessert
Serves: 6-8
  • 1¾ cups graham cracker crumbs
  • 1 Tbsp. sugar
  • 6 Tbsp. butter
  • 1½ cups shredded coconut
  • 8 oz. cream cheese
  • 1 (14 oz.) can sweetened condensed milk
  • ¼ cup fresh lime juice
  • 1 tsp. lime zest
  • 3 Tbsp. greek yogurt
  • 1 tsp. vanilla
  • ¾ cup toasted coconut
  • 2 cups whipped cream
  1. Prepare the graham cracker crumble first
  2. Preheat oven to 350 degrees
  3. Combine graham cracker crumbs and sugar in a large bowl
  4. Melt butter and pour over the crumbs and toss until evenly moistened
  5. Add the coconut to this mixture and combine
  6. Spread evenly on a baking sheet and bake 8-10 minutes
  7. Allow to cool and then place about 2 tablespoons of this graham cracker crumble into the bottom of each of the desired serving dish
  8. Next, make the key lime cheesecake.
  9. In the bowl of an electric mixer, beat cream cheese until smooth
  10. Slowly pour in the sweetened condensed milk until fully incorporated
  11. Add the lime juice, zest, greek yogurt, and vanilla and mix until all ingredients are evenly incorporated throughout
  12. Pour the cheesecake mixture on top of the crumble in each serving dish
  13. Cover and chill in the refrigerator at least 3 hours, or overnight
  14. When ready to serve, garnish with toasted coconut and whipped cream
