Quick Pickled Cucumber Salad

this is one of my favorite summer time recipes! quick, fresh, cold, and delicious. i make it the way my mom did – with dill. i have seen several versions of this salad around the web but this is the way i like mine! this quick pickled cucumber salad will have you ready for summer entertaining or to just sit on your porch and relax! it is a staple at our backyard BBQ’s and one of the first dishes i make if i’m headed over someone’s house in the summer. it is also really yummy on a pulled pork sandwich or taco! and the best part? it only has 6 ingredients and takes less than 30 minutes!!

Quick Pickled Cucumber Salad with Dill

Fresh and Easy - this quick pickled cucumber salad is perfect for entertaining this summer!
  • 2 cucumbers
  • ½ small red onion
  • 1 Tbsp. salt
  • 2 Tbsp. sugar
  • 3 Tbsp. rice vinegar
  • 2 Tbsp. dill
  1. Peel cucumbers - I leave a bit of the skin on to give the salad and extra punch of green color, but that is optional.
  2. Cut cucumbers in half lengthwise and remove seeds.
  3. Cut cucumber and red onion slices and place in a medium size bowl.
  4. Sprinkle with salt, toss, cover, and set aside for 20 minutes.
  5. Rinse the cucumbers and onion in cold water, drain, and place in a clean bowl.
  6. Add sugar, vinegar, and dill and toss to combine.
  7. Serve immediately or chill for up to a day.
