Sometimes, trying to figure out what to make for dinner can leave us wide-eyed and fearful. Like a deer in the head-lights, we cautiously peak into the refrigerator or pantry hoping for a miracle…or maybe a jeanie. After making a lot of decisions all day long, the last thing I want to do when I get home is trying to “figure out what the make for dinner”.  Here is one of the solutions I have found to that very problem. This is a one-pot, 5-ingredient bacon cheddar soup recipe thats ready to rock in less than thirty minutes…

In other words, I found the jeanie you wished was in your cupboard.

I have yet to find someone who doesn’t love this soup. It’s hard to find complaint with nice salty bacon, creamy-cheesy texture and chunks of onion. Dill is a great addition if you want a little extra foundation in the flavor profile, just to make it interesting. If you decide to use dill, I suggest starting with one tablespoon of minced, fresh dill. If your dill is dried, 1 1/2 to 2 teaspoons should get you in the ballpark. One of the best things about simple recipes is they give you a wide berth to make them your own. If you want a little more tang in tastebuds, try using a sharp cheddar or sour cream instead of half and half. I prefer a smoother, more subtle approach, so I use the half and half and a mild Colby cheese.

One-Pot Bacon & Cheddar Soup

One-Pot Bacon Cheddar Soup
Serves: 4
An easy, on-pot meal perfect for the mid-week crunch. Kid and family friendly!
  • 2 cups chicken broth
  • 6-8 Slices of your favorite bacon
  • 1 large onion, diced
  • 2 cups Colby cheese
  • 1 cup half and half
  • Salt and pepper to taste
  1. Heat a large, heavy-bottomed pot to medium-high heat. Fry the bacon until crips, remove from pot, and drain on a paper towel. Discard all but 1-2 tablespoons of the bacon grease.
  2. Add the diced onion and saute until translucent and fragrant, about 2-4 minutes.
  3. Add chicken broth and bring to a low simmer.
  4. Reduce heat to low and add cheese and half and half slowly, stirring frequently until the cheese is fully incorporated into the soup. Add salt and pepper to taste.
