my little brother had an iguana named jeffery and this was all he ate. other than this, all i knew of kale was that it was a garnish i accidentally took a bite of at a resturaunt as a kid… don’t worry. i didn’t make that mistake again. UNTIL NOW. kale is allllllll the rage. and i’ll be honest, my tastebuds have matured with time. baked or raw – this healthy veggie has carved out a little place in my heart.

this recipe was inspired by the Sargento® Chopped at Home Challenge. i participated in the second round with my cheesy chicken stuffed pepper recipe and am back at it again for the third round! for this round the challenge was: kale, bacon, oyster crackers, and Sargento® Chef Blends 4 State Cheddar. i debated about making a soup or a baked mac & cheese (which i will probably still do because they sound so amazing!) but finally decided on a quiche!

i have made and enjoyed plenty of spinach quiche before so i figured kale would be a great substitute, and also balance out nicely with the oyster cracker crust i wanted to try. YES. cracker crust. they make the perfect salty, buttery, crispy crust to accompany the quiche! put the crackers in a food processor to get a fine crumb, add butter, and then press it into your pan! i decided to make mini quiches to maximize the crust-egg ratio

it was all topped with the Sargento® Chef Blends 4 State Cheddar. this cheese is SOoooooo good. it’s a mix of sharp wisconsin cheddar, sharp vermont cheddar, sharp new york cheddar and mild california cheddar cheeses – that is FOUR states worth of cheese people. if you are a true cheddar enthusiast – this is you jam.

Kale and Bacon Quiche With a Cracker Crust

Ingredients
  • 1½ cups oyster cracker crumbs
  • ½ cup butter, melted
  • 1 Tbsp olive oil
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • 2½ cups chopped kale
  • ½ cup bacon bits
  • 1½ cups Sargento® Chef Blends 4 State Cheddar (divided)
  • 5 eggs
  • ¾ cup heavy cream
Instructions
  1. Preheat oven to 350 degrees.
  2. Combine the cracker crumbs and melted butter. Press onto the bottom and sides of your baking dish.
  3. Heat olive oil in skillet. Once hot, add kale, onion powder, and garlic powder. Toss to cook lightly for a minute or so.
  4. Add cooked kale, bacon bits and 1 cup of cheese to to the baking dish on top of the crust.
  5. Whisk together eggs and cream. Pour mixture over the bacon, kale, and cheese.
  6. Top with remaining cheese. Bake at 350 degrees. Bake time will depend on the size of your dish. If using muffin tin bake for about 15 minutes. If using individual tart pans bake for about 20 minutes. If using a pie pan bake for about 30 minutes.
  7. Allow to cool 10 minutes before slicing and serving.
