Quick Pickled Cucumber Salad with Dill

Fresh and Easy - this quick pickled cucumber salad is perfect for entertaining this summer!
  • 2 cucumbers
  • ½ small red onion
  • 1 Tbsp. salt
  • 2 Tbsp. sugar
  • 3 Tbsp. rice vinegar
  • 2 Tbsp. dill
  1. Peel cucumbers - I leave a bit of the skin on to give the salad and extra punch of green color, but that is optional.
  2. Cut cucumbers in half lengthwise and remove seeds.
  3. Cut cucumber and red onion slices and place in a medium size bowl.
  4. Sprinkle with salt, toss, cover, and set aside for 20 minutes.
  5. Rinse the cucumbers and onion in cold water, drain, and place in a clean bowl.
  6. Add sugar, vinegar, and dill and toss to combine.
  7. Serve immediately or chill for up to a day.
